What is the difference between General Mode & Low Latency Mode

Process modesThis is the default process mode for all new processes. This type of process can also be called a traditional process.This processing mode is to improve performance for short-lived processes (where total execution time is generally expected to be less than 30 seconds). 
Simultaneous  executionAllow simultaneous flag is unchecked by default.

Process statesIn this mode,  process execution will be done by logging every state of the processThe Low Latency option for processes greatly increases the speed at which a process executes by not logging every state of the process. 
RetryRequest and response data is recorded. Therefore we can retry the processRequest or response data is not recorded. Therefore, you cannot view request or response data, and you cannot retry a low latency process
Process logsProcess metrics are recorded in the View Process State dialog, and the process log is available.  Process metrics are not recorded in the View Process State dialog, but the process log is available.  
Document logsThe inbound and outbound document logs are available.  The inbound document logs are disabled.  
Email alertsWe can generate Email alerts.We can’t generate email alerts for low latency processes
Start ShapeWe can choose any of these options  
1. Connector.
2. Data pass through.
3. No data.
4. Trading partner.  

In this mode, we don’t get any options as shown below:
